This off-dry dessert wine is from Primitivo grapes, which are left to dry on the vine. Soft, full-bodied and exceptionally aromatic IGP quality level wine. Embraces a complex bouquet of flavors which range from candied fruit to blackberry with hints of dark spices. Pairs with cheeses, appetizers and your favorite pizza and pasta dishes. Passito is used in Italy to describe wines that have been made from dried grapes, in the appassimento method. When talking about the appassimento method, we refer to a very ancient practice, which has been known and used in Italy since the Romans (1st Century B.C.), mainly for the production of sweet straw wines. The appassimento method consists of leaving the grapes to dry so that the berries lose a considerable amount of their water content while all the other substances become concentrated.
